How do mods work for single player games? And can you edit game files themselves without getting a ban? Or does it work the same as online games where you can get a insta ban, because the of how the system detects it?

you need to ask to the modders of what game you need to mod.

All single players games Not need to work in the same way.

Are things like The last god of war can but the first Gow cant

All depends of the game, the age of release and how is "complex" is the main code of the game

Single player game modding is fairly safe if done offline. The main thing you need to worry about is telemetry reports. For instance, BOTW telemerty is insane and if you plan on playing w/ mods and going online, is highly recommended you disable them. Such a patch doesn't yet exist for LA. However, if you use EmuMMC it's almost 100% safe.
